Gordon is actually a soft spoken person, the reason he yells all the time is because he has to talk over dramatic stock music and generic sound cues.
If you think about it this makes perfect sense because he sounds like a normal person in the UK edition of Kitchen Nightmares, which contains nothing of the standard formula for US drama TV.

I did see a few episodes of the UK version where he did yell like he does in the US version. I think the difference is that in the UK he's treated differently and people behave differently. Like a lot of the UK ones it seemed mostly the people were genuinely passionate, but just really awful at what they were doing. On the flip side, the US mostly features people who are just jackasses who think they're better than he is and ask him to come thinking he'll go, "Ohh, yeah, it's great, everyone else is the problem!" and validate them. There have been episodes of the US version though where the people were genuinely trying and just had no idea what to do, and he wasn't as angry.
What I wanna know is why the pest infestation wasn't the #1 on the list. No way that would pass an inspection.
