With SSH you can run commands on a computer remotely. (Comparable with the program HLSS managing a CS:S server)
VNC is a lot like teamviewer, you can view a screen from a distance. Usually you can control the computer from a distance too. (with mouse clicks and everything)

Thanks johan_sm and FPtje for clearing those two questions up. I wasn't able to laugh at all the jokes, but got the two non-computer related ones.
Even though I don't know that much about computers, I do know that the term hacker has a wide range of meanings. The media has defined it down to a point, and I feel that that's what everyone is expecting.
