Sushi is really expensive because the chefs have to train for years to ensure that the food they prepare is clean and safe to eat. If you want a medium-rare burger, have a steak burger or something- the whole point of mincemeat is that you cook it decently.

Majority of ground beef is made from chuck steak, burger mince is specifically made from steak cuts.

The point is that ground meat is not meant to be eaten raw from the production on while whole pieces of meat as well as sushi are produced in much higher safety standards how hard is this to get.
