What about nuts, almonds, peanuts? Those can rack up calories pretty fast.
I do eat those, but more as a snack and less as a part of a meal.
I ultimately just feel like I'm going hungry the two nights a week that I've cut out meat at this stage, and it just feels like I have to eat a staggering amount to fix that.
I started by googling what good vegetarian meals to start where, and went from there.
My parents converted to veganism a few years back, and I learned pretty quickly that you can make some really good food that doesn't need meat. I barely ever cook with meat any more, mostly because of the cost, but I never really miss it all that much.
That does seem odd. Though if you feel hungry afterwards try drinking some herbal tea. I know that helps me.

I have one "vegetarian" meal(it's better to use beef stock or beef bone broth if it's on hand, just results in a tastier dish) that does fill me up and that's Mushroom bourguignon, but again, I'm just eating a shit ton of mushrooms at that point.
If broth is good enough for you and herbal tea still doesn't cut it, put a cube of chicken broth in a mug along with a tablespoon of butter and fill with water. Should fill up whatever room you have left.
No, I'd rather just not have too much of any given food item at a time. Balance and all that.
I suppose, but if it's either that or meat then mushrooms are still the lesser of two evils, considering you only abstain from meat two times a week you're not missing anything nutrition wise.
I'd like a follow up video with further examples of what can be done to reduce/minimize the downsides of the meat industry, along with the seafood industry and specifically why humans find meat tasty. Some of the lab meat startups have figured this out, but if you can make the economic argument that lab meat is cheaper whilst still being the same level of taste or better, then the meat industry and all it's downsides would greatly reduce.
