Well, Haruhi was actually pretty decent, but those other shows you have watched are pretty much the generic moé "cute girl doing cute stuff" crap, so you might as well give us some genres you like and we might be able to recommend some decent stuff for you.

Implying moé anime isn't made nowadays just because it doesn't require any plot, script, scenario, character development and whatnot so studios can just use their budget animating the said cute girls and desperate and ronery otaku fans eat it all up.
And no, you cannot question my manliness by implying I don't watch shitty shows.
I mean, for example CLANNAD was excellent, since it had cute girl and a fucking PLOT plus the character development.

We'll those are pretty soft, the difference between hard and soft is that hard is focused more on the scientific accuraty and soft more on the story and the characters
If you like cyberpunk, I can recommend Ghost in the Shell, both the two movies, the series, and the movie that's a sequel to the series.
I also second Cowboy Bebop.
