Well the whole point is that you don't treat them as a product, something to be used regardless of their feelings. If a human wants to let himself be eaten, then I guess my first response would be to get him or her some help. So I would do the same for the cow.
I think I can satisfy your answer a bit better with a different example. If there was an Ameglian Major Chicken and she wanted to give you her eggs because she hates the taste or she likes to see people happy from eating her eggs, then there is no vegan reason I can think of to not accept those eggs.
