I remember my teacher telling me that it is because when their eyes are open, they look rather creepy, so closing their eyes makes them look more at peace and therefore people remember them like that. It's just a sign of respect.

What i never got was how they always do it in movies. Just brush their hand over the face and the eyes are closed. That does not work in real life. Directors have clearly never had to close a dead guys eyes.
