I used to be a waiter and once had a customer request a completely raw new york steak. Since that would be illegal, we had to compromise by lightly grilling the steak on both sides, with the agreement that nobody fucking tells the USDA and that if he gets sick it's his fault. Normally I never got hungry handling people's food but something about that bloody steak was alluring. I went home and made the same steak for myself and it was awful, it tasted like nothing I'd ever had before and felt just as pleasant as you would think cold wet meat would be. I ended up eating carne asada grilled to near-charcoal, my favorite. I guess I'd like to confess that "real" steaks are lame to me, and that I'd rather have some beef jerky in a tortilla. Foodies can kiss my ass

A friend of mine wanted me to try mid-raw steak, so he invited me over to his place and he made some for me. I liked it but I like my steaks medium-well, a little bit of juice and pink. I don't geet how anyone can eat raw, bloody meat :sick:

The minimum you can cook a steak without risking bacteria is med rare. There's no less risk going up to medium or well done, the bacteria is only on the outside of the steak (introduced during the butchering process) so at med rare, it's dead. For burgers it's gotta be well done, but eating med well burgers probably won't get you sick. I grew up on well done everything because my mom couldn't cook to save her life, and edged closer and closer to med rare steaks after I moved out. It's just more tender and juicy. It practically melts.
