One of my favorite things currently is vegan Mac and cheese where instead of cheese the sauce is a blend of butternut squash, nutritional yeast, and various spices.

I also once made it with miso instead of nutritional yeast because it's kind of hard to find and it was really good too. Vegan food is like the most refreshing thing ever.

Upper floor neighbors are going through a brake up by the sounds of it. Lots of "Don't believe them" and "I still love you". Would feel empathy if their relationship didn't sound like the longest shouting match in existence.

Vegan food is some of the hardest food to make too, mostly because you do not have the crutch of flavor that meat provides, so if you fuck up its a disaster. I will only east unconventional vegan dishes, aka stuff that isn't like a salad, if it's made by chefs I trust, because it can become a huge disaster really quick. When it's made by someone who knows what they are doing vegan food can be amazing. Like these vegan tacos I occasionally have. They are made with marinated limes instead of meat, but due to the way they are marinated they gain the umami quality of meat, yet with a tang that is super unique and complementary. Fuck I want some vegan food now.

While nutritional yeast does carry a somewhat similar flavor, it is not as if it is trying to fill a role that would be best suited for cheese. In my opinion the flavor it gives compliments the dish more than the flavor dairy has. Also since the sauce is literally butternut squash and protein it's about a million times more healthy than a similar serving of the cheesy variety. Vegan food is at its best when it takes inspiration from non-vegan dishes, but puts a well thought out spin on them to make the two almost incomparable.
