Not sure about America, but in Australia you cannot offer this work position without paying at least minimum wage - even during a 'trial' position, the employee must be paid.

if your not comfortable enough with giving them you number or any personal stuff then you really shouldn't be applying. It's a job. They don't want to just give some random person the position and not know who they are.
