I've been itching to get into any and all mecha anime. I started the original Mobile Suit Gundam recently and Gurren Lagann is on deck. I'm also interested in Evangelion (though I know it's thematically very different than most mecha anime). What are some other must-watch shows when it comes to giant robots?
Also which Gundam series should I watch/avoid? For instave Ive heard that Gundam Wing is pretty bad.

Macross series.
If you can stand old shows, watch the original Macross first (36 eps, made in 1983) then Macross: DYRL (kickass movie with amazing animation, even has 1080p BD out) Macross Zero -> Macross Frontier -> other Macrosses (Macross II, Plus and 7)
If you prefer new animation, go Zero -> Frontier -> Original -> DYRL -> rest
avoid Macross II and 7. Everything else is good.
Also check out Blue Gender for some grounded mecha, and Star Driver for 15-year-olds-driving-space-magic-mechs-without-adult-consent.

You should also watch Full Metal Panic. All three seasons are great.
As an extra incentive, the second and third seasons (Second Raid and Fumoffu) are animated by Kyoani (the dudes who did clannad, nichijou etc).
I watched most of FMP's first season and couldn't really get into a lot of it. it needed to have more high school comedy or more mecha because the balance it had wasn't really working, and the poor animation of the first season didn't help.

As far as the main series are concerned:
The original, Zeta, Turn-A, and the first season of 00 are all great.
ZZ and G depend on your mindset. ZZ starts off as pretty goofy and campy (which I personally liked, but others didn't), and G is a hotblooded martial-arts-tournament series.
Most of the others are okay, the only ones I would outright avoid are Destiny and Age.
