I don't think you read my post before that, but that's acceptable because you posted the video in response to my post that I made before you edited the video in, then I edited my post to incorporate my reaction to the video. If the [I]entire show[/I] was like that then of course Hidamari would fall into the definition, but a series of short dream sequences is not representative of the entire show's art style.

My initial criteria, keep in mind I haven't seen more than the briefest of it in motion, for a show to have a "unique" art style tends to be the initial look, when you can grab a random screencap and it is
So while you might go "uh yeah it was unique" there wasn't really any way for me to tell compared to something blatantly different like, the rest of Shaft's stuff, Mononoke/Kaiba/Ping Pong-style radically different art styles, that sort of thing.
He's still never gonna watch it though. I know that much.

It certainly fit the mood in Bakemonogatari, the feeling that there's just nothing out there besides these characters.
Usually the grey or minimalistic or entire lack of presentation of crowds is meant to put emphasis on or provide direct visual representation of the fact that really nothing outside of the named characters and the cast matters.
I think it was Durarara that had grey crowds, but if any nameless character interacted with the main characters in any way, they became coloured in.
all of shaft's personnel are just completely unaware that there is an entire society of humans right outside the offices, which is why the studio is so eccentric

What you just described is called character drama. Ping Pong isn't [I]really[/I] about sports. What's actually happening in the matches is irrelevant other than the broad strokes which are still used to show the characters. To list short examples Peco can't hit slow, high, lame moves because he goes big or goes home and has no patience or flexibility. He's childish and is a showoff and that is shown in his style. Smile is cold, hard, methodical, and brutal because he's a robot. Wenge is all desperation. Kazama is visually depicted as a goddamn monster which again comes down to his personality. The moves being made directly represent the personalities and state of the players. How many times did it just show a couple turns then cut to them being at the end of the game? The games were usually over quickly too.
Ping Pong is a character drama. I don't know what else to call it other than a character drama or a character study with the premise of being built around ping pong.

I watched Chihayafuru for the competetive elements, watching the characters struggle to get better, getting through the highs and lows of their road to becoming the best at karuta.
I watched Ping Pong for the people trying to figure out what to do with their life, pursuing the sport or giving up, and their road to getting to that decision.

I watch Hajime no Ippo because I want to watch a guy box. Why the fuck would you watch Hajime no Ippo if you didn't want to watch a guy box? Ippo has nothing to his life other than how he wants to box and how he wants to continue his career. The fights are step-by-step and go for three episodes on average. 98% of the show besides the fights is Ippo goofing around with his friends and training. Other than one arc where they address it, Ippo has no life or aspirations outside of boxing and the next fight coming up. Everything Ippo and the characters of the show other than his opponent's personal lives and reasons for why they box, are about boxing. This is a sports anime through and through.
Ping Pong is not a show that shows us more than snippets of how the players train and play. Fights in Ippo are a step-by-step tactical affair. Ping Pong's games are like a direct representation of the player's personality, as I said before. People's lives may be ping pong-centric, but the sport itself is not the focus. Peco's immaturity, Smile's cold and withdrawn friendless and lack of any enjoyment or passion in anything he does, Wenge's desperation to claw his way back into what he had built his life around that had fallen to pieces around him, Kazuma's whole deal that I don't want to get into since he's a late arrival, that's what I watch it for.

I haven't watched Hajime no Ippo, I just know it's also a lot about the character and not just boxing itself.
Like you're bringing up, his only care in life is boxing. It's a show about watching a person pursue his dream and trying to get to his goal, one fight at the time. It's about the character, not about the boxing.
Take Ippo out of the show and replace him with random characters, what do you have now? Just a bunch of people you can't relate to that are boxing. Whoop de doo, who cares?
Hajime no Ippo is about Ippo and his boxing career. It's not about boxing, it's about Ippo Boxing.

Sports without drama doesn't make a show.
If you had no drama in a sports show it would simply just be sports, the kind of shit you see when channel surfing. People just playing sports, nothing more, nothing less.
Sports are character dramas no matter what because it's the only way you can make a proper story out of them.
Sports = character dramas.
Dramas =/= sports.
