Save yourself the trouble on the long run and deep fry your heart.
If you live in an area with kudzu it is pretty good fried. Gather only small leaves and new tendrils otherwise the taste will be bad (dont worry the leaves lose their hair as soon as they hit the oil). Coat them in a plain batter of flour and water and fry them until the coating is golden brown. Coat them in seasoning while they are still hot, I recommend mccormick montreal steak seasoning, but any seasoning will do. This was a favorite in my field botany class, we would cook it up whenever we could. Kudzu is normally available in massive quantities...
