The rocks hover because Unobtainium is a room-temperature superconductor, which is the entire reason for humans to be on Pandora in the first place.
Also, the humanoid form is surprisingly versatile, which is why it has evolved on so many separate events on earth. We can only assume that the same thing has happened on Pandora.
