Does SWKotR require a keyboard to move, or can you do it with the mouse? If it can be done with the mouse, then that'd be a good one.

Yep, if you hold both mouse buttons at the same time character moves forward and move mouse to change direction.

Also if you have a mouse with lots of extra buttons he could play World of Tanks, just to bind keys for throttle, left, right.

This is actually quite fun when you load your own music into it. Its a good way to waste time and you only use the mouse. I recommend this. It's still in development, so for a person like me (plays it every now and then) its different every time I play it.

Thank you, was about to suggest Monkey Island. In that vein, any old P&C game works. Leisure Suit Larry, Space Quest, King's Quest, etc, all of those would be awesome for him. I'd also reccomend things like Diablo 2, could play old-school shooters, just bind forward to a mouse button.

A lot of suggestions here would also be challenging to play with only one-hand.. Because like OP said, he's really one-handed and is not probably an experienced player to start with.

Earthbound can be played with one hand, you can use L to do everything the face buttons do.
Look into these, apparently there are some you can program to use specific keyboard shortcuts and such...also there fucking badass, I mean, just look at them.

He's a computer and mechanical engineer, so trust me, making full use of the keyboard is something he does on regular basis.

I would argue that you could play World of Warcraft one-handed. Clicking both keys moves forward by default. And the spells that wouldn't be mouse-bound could be clicked on.
Simulation games are also awesome for one-handedness, like Organ/Oregan Trail, Real Life Simulator, etc.

most turn-based RPGS would be fine since you're not punished for taking your time, and as long as you can rebind keys it should be easy to keep everything within 1 hands reach.
some SNES games you could emulate that i'd personally recommend are earthbound, super mario RPG and chrono trigger, and theres also FF6 on there although i haven't played that.
he could also play the stanley parable one-handed if you bind the right mouse button to walk forward. he'd be done with it pretty quickly but i'm sure it'd still be an enjoyable experience.
