I don't know shit about clannad but going for the dipping route doesn't make sense in fate/stay due to the whole people dying thing.
I mean the primary method of interaction in this series is combat/murder.
Or are we gonna have multiple fight scenes where nobody dies/actually accomplishes anything while following multiple characters having their epiphanies in very specific circumstances at the same time?
Like I said before you are far better off going for:
A: just do a decent UBW adaptation (their choice)
B: just write a new story entirely in the same context.
Option C: is bound to end in a stupid mish mash that wouldn't be as good as either option.
As for the whole 70 episode route. If you plan on covering the entire series...

But I gather that you'd prefer this over the show taking extra liberties if it meant violating the original material's narrative? Following it randomly with no concern fucks it up.
However trying to make shit up/include everything also fucks it up.
Problem is finding a common gray spot in a broad community is fucking impossible. Buuut in general its better to be a bit higher on the former spectrum then the latter spectrum.
Anyway I don't think its a shame to have a faithful adaptation of UBW. Its the UBW anime so you get exactly what you expect. I mean its not perfect nor is it a masterpiece but for me its a breakfast/lunch show. Like I said I'll judge if they got the ratios right once I actually finish it.

Ore monogatari, Shokugeki no souma and kekkai sensen are my favorites.
Hibike Euphonium, Kekkai Sensen and Arslan Senki are probably my top 3.
