Basically any game with character customization and LONG playthroughs. Best example for me is Mass Effect 2-3, Dragon Age: Origins, Skyrim with mods, Fallout 3/New Vegas, Dark Souls, and any Total War game. Heck, living near Bethesda and having a friend in the family that works there has some potential work benefits.
Dark souls 2 is so engaging it's insane recently though super mario 3d world I've been stuck to wind waker HD is going to be like COCAINE I just can't get enough out of adventure games they are the best
The Elder Scrolls Series (starting from Morrowind, since it was the first one I played.) Half-Life Red Dead Redemption Spyro the Dragon (Playstation 1) Legend of Zelda [I]This one is a bit of a rough pick,[/I] but I really became immersed into the Naruto Ultimate Ninja Storm series, the one I felt most immersed into would have to be Ultimate Ninja Storm 3. The feeling of being a young ninja with the power that most couldn't compare to, along with the weight of the world practically on your shoulders really took me into the story line for UNS 3.
Doom 1 & 2 honestly.
TERA: Online I made a soundtrack for each zone before I even got there. Made it all the way to 60 within a week. Many memories.
May have been mentioned already, but I've been heavily immersed by XCOM Enemy Within recently. And the Long War mod.

For some reason Pentos decided to take King's Landing and no one is doing a damn thing about it. Skyrim when you get a random-start mod and just make your goal "be a mercenary for hire." It works surprisingly well. Right now, I'm just going town-to-town doing things for people, instead of following questlines and such.
Wolfenstein The New Order, this is like my most favorite shooters ever made in recent times. It's just feels [i]Good[/i] to play. Half Life 2 (Episode 1&2) I've played and completed these games so many times I don't get bored of them. I just love em. Dawn of War: Dark Crusade, I still play this game. Since it came out, I still play it frequently and I still enjoy it. I don't think I'll ever get bored of this game. GTA V + Red Dead Redemption + Undead Nightmare
Easily the entire Fallout series. I especially liked Fallout 2 since the companion system was so streamlined and the talking heads are a nice catch. I tried to get into New Vegas but there were a couple of grindy missions early on (go to x, kill y amount of z) but Fallout 3 had a lot of interesting questlines with fun rewards. Fallout 3 I think captures one of the best atmospheres but in terms of being loyal to the series it diverted heavily from the Western theme which just makes Fallout honestly.

When I play rhythm games, I don't necessarily forget about reality for an extended length of time, but for the entire duration of a song, my mind completely flushes and is 100% focused on the song. It's a very satisfying feeling that gets more intense when you practice harder difficulties.
Suppose I could add Dragon Age: Inquisition now. It's devoured my free time this weekend.

Oh I forgot! Superbrothers: Sword & Sworcery EP. Engrossing as all hell if you let it be. Play it for the adventure, not the challenge or gameplay. Just zone out to it. And its an absolutely gorgeous game. Simply stunning. Various screens from that game have been my desktop for years. Fun writing and a lovely soundtrack to boot. It's dirt cheap, it's pretty short, if you haven't played you owe it yourself to correct that.

Though when I say focused on the song it can either mean literally focused on whatever song is playing or the game track depending on how difficult it is.
