I don't know if it has a name but health meter that is separated into parts and each part will regenerate if not depleted. (Far Cry 3, W:TNO)
Proper weapon animations and mechanics (gun doesn't need full reload if a round still in the chamber, full mag + 1 bullet in chamber, gun isn't cocked each time you pull it out).
Satisfying/realistic weapon sounds.
Upgrade systems that allow you get everything (I don't mind it missing in a class based game but I love going through games again with everything.).
That brings me to another, new game+.
There are other but a lot of them were already mentioned.
Not having to rely on NPC's stupidity to succeed in stealth games.
Split-Screen
Co-op
Multiplayer games that have local bot options.
Being able to shoot freely without scopes and non regenerating health.
Destruction like in (or better than )Red Faction: Guerrilla
It should be a standard in most games by now
Something in Graviteam Tactics/Achtung Panzer that I noticed, and that is that you can transfer units to an AI commander, and get it back after that.
its fucking great, and very nice for massive battles
Pacifism. I love it in games, intentional or not, where I can get through the entire game without killing a single person.
Games like S.T.A.L.K.E.R. where your gun can jam in the middle of a fight.
Gore.
Especially in melee focused games. Good gore is almost integral to having a visceral, immersive experience. I don't like it over the top with "decapitating dudes every five seconds", because that it just plain unrealistic, but it adds to the immersion to have some gore in there.
RTS:
Differing front/armour/rear/top armour values for AFVs, eg Ground Control
Makes positioning your units and covering flanks a lot more important
The ability to set formations - Facilitates above

Vehicles crewed by infantry you can dismount (eg Men of War)
Unit supply/inventory management (Eg JTF2, MoW, Wargame)
You have to manage your supplies meaning you may not necessarily be able to commit a force to an engagement if they are out-gunned or short on ammo
Morale systems (Dawn of War, Company of Heroes, Wargame)
Means if you put your units into a really bad situation, they won't be as effective as they would be otherwise
Vehicle crews and damage models (Men of War)
Rather than an arbitrary number that reduces every time it's hit, this means a given vehicle can have certain equipment disabled, mobility and weapons being the main ones, as well as making single-shot kills on armoured vehicles possible with the right weapon and circumstances. Combined with actual crew this means you can potentially commandeer vehicles abandoned by enemies due to damage or their crew being killed
Actual difficulty.
Not too easy that I breeze through it without a challenge, but also not hard because of the wrong reasons (enemies having huge amounts of health and no reliable way to deal with them for example)
Alternate costumes.
I will just straight up buy a game for the lone reason of if it has cool alternate costumes.
See: Tomb Raider, Amazing Spiderman 2, Assassins Creed 3 and 4, etc.
A good gore system.
Games with red faction like destruction and good object physics are so rare those days. And when it comes to ragdolls gta iv and source engine are the best.
- Character creation (In any game that has an in-depth character creation system)
- Inventory system
- Being able to move bodies around (this is a life saver in STALKER)
- A damn good stealth mode in a game that isn't primarily stealth-oriented (DX:HR)
- Leveling up and being able to improve your stats
