Vampire The Masquerade : Bloodlines. Good Dialogue, Good Story. Shitty Combat, Buggy.

Back on topic, Silent Hill 1-4, the Metro games, Vampire Bloodlines, Hotline Miami, New Vegas, Lone Survivor, Jade Empire, Bioshock 1 and Infinite, Alice, Call Of Cthulhu (the first half, anyways), Deus Ex, Home, Alan Wake, CoD: Big Red One, Wolf Among Us, Walking Dead, Spec Ops the Line, Kentucky Route Zero, Papers Please, Knock Knock, Bastiom, Stalker, To the Moon, and I'd also say Underhell but I'm pretty sure I'm alone when I say that.

The Last of Us was really immersive. I think the story and writing gets more praise than it deserves, bit still worth your time ten hundred percent.

red dead and max payne are a few that come to mind basically anything by rockstar
Mount and Blade Warband, simply because I created my own story. I had literally conquered all of Caldaria and then it all fell apart before my eyes and NPC's I'd considered best allies turned on me simply because I didn't give them enough land. It's a shame you can't execute nobles as King, I would have purged my entire faction.

LA Noire, especially when you first start up. It's really fun getting into the whole 50's vibe, especially with the whole noire thing going on. Fantastic game for getting absorbed in late at night.
Killing Floor. By the end of one game, you'll be yelling "I AM WELDING THIS DOAH" every time you lock your house front door and you'll get lods of emone.

STALKER games (despite some storytelling faults the first two games are actually hella interesting story wise, given you play them in release order) Fallout 1, 2 and new vegas (1 is the most atmospheric) Thief series (The dark project/The metal age/deadly shadows) ^ If you are looking for an immersive storyline Thief is your best bet. The ambience is extremely immersive and the games are incredibly well written

Dark souls is really immersive by the time I finished it I wanted to set myself on fire too.
