Sad to say but you'd be better off finding another home for the mouse if your cat doesn't drop trying to eat it in the next month, because eventually it'll either die from your cat succeeding, or just from sheer stress. Have you brought it to a vet already ?
I think you should move the cage to a darker, quieter area. (Like inside a wardrobe - I think the darkness allows rodents to feel more at home walking around or making a more permanent nest. (Oh yeah, add a bit more bedding in, more finely torn up though so it can make a comfy bed / cushion its tube.))

Unless you're lightning the insides of your walls it's probably quite dark there. Mice have naturally good night vision. Bread is good for energy but bad on the nutrients and proteins it'll need to get healthy - if you have bird seed, it is good for emergencies. Nuts are good for protein, but try not to give them too many peanuts if you can (it can make them fat after a while).
