guns that are so viscerally entertaining or just cool to use that you would happily fire away for no reason just to look at all the pretty colours etc.
Also games with a 'cheat' mode, particularly sandbox games like Cities XL, opens up a whole new level for the game, because instead of trying to achieve perfection by playing the game for hours you can just go and do it, and make whatever you want and play around with it, which is equally entertaining.
Racing games that find a decent balance between realism and entertainment.
Gran Turismo 5 may have super realistic physics engines and realtime engine telemetry calculations etc. but it's not necessarily that fun.
Similarly, games like Hot Pursuit, Burnout Paradise and Blur may be a like a real-life rendition of Mario Kart with flashy lights and completely unrealistic cornering but that really isn't for everyone.
I like it when games feel like a game, and aren't overly realistic.
I like it when a game doesn't take it itself too seriously, but not to the point where it gets to"LOL so RANDUMB XDDD."
A few things, really.
Storyline, characters, open world, terrible physics and what not.
I've also noticed that indie games are some of the best games with the most fulfilling, mentally, story lines out there.
You can look at a game and say, "wow those graphics", much like Serious Sam, but not feel that great playing it. Or, you can get lesser graphics with better storyline like Thomas Was Alone or Dear Esther (although dear esther is pretty freaking beautiful).
Game with simple but nice graphics.

games with a sense of scale, especially those that deal with air & space
x and the like are fucking dreadful with the biggest guns hitting out to 6km max and firing projectiles that move slower than the fighters that in turn move slower than real airliners.
and i wonder why games like battlefield bother with jets when they move about as fast as the tanks below them and can't fire on anything more than a foot away
In the case of first-person shooters, if the singleplayer is actually worth your time, and the combat is difficult for the right reasons (i.e: Not having 6 cyberdemons in a small room. I'm looking at you, Alien Vendetta)
an immersive atmosphere
when i play a game, i want it to operate in the same way that i feel when i watch a good film: i want to become a part of the world, i want to feel what the characters feel, and i want to escape
i'm still searching for a game that does this perfectly, but from what i've played in the last of us, it's come pretty close (i'm only about 20% through though)
Dialogue that is tense in a conflicted way, e.g one character says something true to incarcerate another, but the other character counters with an equally true counter argument. Leading to a tense impasse.
TL;DR: Great writing and acknowledgement of character's actions and situations

BFBC2 was good at this imo
When the artstyle uses plenty of colours.
For recent examples see Bioshock: Infinite, Europa Universalis 4, Planetside 2 and Rome 2
When a game has a lot of personality, games I can think of that did this were Killing Floor, Rising Storm, and Blood Dragon, Rising Storm did it a lot differently than the other two since it was far more serious, but it still had some real personality and unique feel to it, I like when a game does that.
Good facial animations
Also guns that sounds and feel like guns, not amputated peashooters with no kick
When games have soundtrack played over while playing, like in Far Cry 3 with the Burn Dem song and more recently the beginning of Saints Row 4. Makes it feel like a music video.

Also good story, dynamic characters and plot good plot twists you don't see coming, like in bioshock (one and infinite) and Spec ops. The Line

I absolutely love games with story and interesting characters. Quite a few adventure games do it rather well.
Games that are actually really funny and when the humour doesn't rely on references to other games and stuff like that.

Bad Company 2 had a better multiplayer while Bad Company 1 had a better campaign.
High stakes, high reward gameplay is always fun.
e.g. just dodge and just parries familiar from character action games

Another reason why I like Awesomenauts over League
When you pass the point of no return and you know everything is hopeless, but continuing to fight until the bitter end is still rewarding and fun.
Not often it happens, but a few examples would be:
XCOM (the original, the latest one isn't as good in this regard imo)
Empiresmod (it's hard to explain, but when you're an antitank soldier and the enemy can field like 30 tanks with the best weapons and armor, every kill you make is 10x more rewarding, even if all is horribly horribly lost)
Dwarf fortress
