I like good quality weapon sounds, not just some crappy "Pew pew" while shooting. Having my headphones rumble when shooting some huge gun always makes me feel powerful and cool.
When a video game has a boss and you defeat it. This enemy is a challenge say in an early part of the game but later on when you reach the end you meet this boss again but as a common enemy. Always gives me a feeling of accomplishment knowing that such a hard enemy when I started off small was so difficult and it feels so good to use all your recently learned skills and weapons to batter the absolute crap out of him. But also realizing there is a bigger fish at the end of the pond waiting for you.
Bonus points if the enemy also "learns" from his mistakes and has a trick up his sleeve to buff him a little.

BC1 Multiplayer felt like an actual battlefield game
BC2 was literally CoD with jeeps and tanks sometimes.
Ragdoll physics, or death animations that transition to ragdolls.
Skill tree and leveling system
Modern Warfare 2 allowing you to dual wield sawed off shotguns.

Pointless little things to do in RPGs that don't really acomplish much but it stops all the props in the game from being just coloured in polygons. Also ridable motorbikes.

Easter eggs
I like leaning controls in first person shooters, which I don't see very often in new games. Also I loved that in System Shock 2 I could lean forward.
A good, satisfying flamethrower, one that feels nice to use, and that gives a lot of reaction from enemies, Rising Storm did a good job of this, it had fitting range, nice visual effects, a solid recoil, and the screaming sound for burning enemies just felt satisfying.
