Brutal Doom
Any of the Elder Scrolls or Fallout games, especially on a snowy or really rainy day. I'm a sucker for RPGs during weather that keeps you indoors.
The Forrest, Soma
SOMA is a depressing kind of comfy, I'd say.
Open TTD. It uses the same engine as Rollercoaster Tycoon I think, or at least it looks a lot like it.
Sorta. OpenTTD is an opensource clone of Transport Tycoon Deluxe, hence the name. Attempts to make a sequel ended up as a theme park game, Rollercoaster Tycoon, running on a modified TTD's engine. OpenTTD is still fundamentally different to both in that its codebase is an interpretation of TTD's raw assembly code into C++ for ease of development. Speaking of which, Mashinky, a spiritual sequel to TTD, is coming out October 10.
Myst 1, 2 and, 3 (1, Riven and Exile) Monkey Island 1, 2 and, 3 Firewatch (Take your time in it) Half Life 1 on Medium Deus Ex 1 Elite Dangerous Hyper Light Drifter Jalopy Oh...Sir! The Insult Simulator!
Spore
Space Pirates and Zombies 1 / 2. 2 became specially comfy as combat relies heavily on auto aim. everything else is about picking the right fight at the right time.
Spore
It has such a neat soundtrack too!
Factorio... Once I automate my shit I leave i for 16 hours and hope to god the biters haven't fuck3d up my shit.
I always found Super Mario Sunshine to be very comfortable, particularly the hotel level. Just exploring was so relaxing.

I will never not recommend Diablo 2 Also Crusader Kings II
Paradox games in general tend to be pretty laid back if you can get into them. Moreso once you've managed to get through the layers of bloat the dlcs sometimes add. Whenever I play stellaris I usually have YouTube playing and sometimes I even paint models at the same time.

Elite Dangerous chills me out
Besiege. Building batshit insane (kinda) medieval siege machines is so relaxing. Also Foxhole when playing as logistics/ferry captain.
Ace Attorney
Ace Attorney can be comfy or grating depending which of the games you are playing. The harder cases really make you rationalize and think a lot.
Planet Coaster is also an incredibly comfy game.
