It's rarefied. Sparse can only be used in the context of discrete things (grass, wheat etc). Fluffy etc don't really make sense. Rarefied is perfect for all contexts.

I guess a synonym for dense is compressed. So in that case, if you explain that you're using the word compressed in the same context as dense, perhaps you could follow it up in the same sentence by naming its opposite "Uncompressed". Other than that you have limited options as to how you could describe it.
