If we really want to do an overkill the hero could take manual control of a Goalkeeper CIWS system and tear that fucker to shreds. Otherwise he could use a laser guided missile as i dont think they have a high heat signature enough to be tracked with a heat seeking missile.

Well, once they are done breathing fire they wont remain hot for extremly long, seeing how they would probably need to save their fuel for their fire as much as possible they probably wouldn't breathe a lot of it.
I'd fight it until it grew too tired and then I'd have my magical therapod dragon soulmate shrink it down and devour it whole
A decent archer with a poisoned arrow to the eye might do it. Of course you'd need some kind of specialised poison. Or if you have a few more people and a ballista you could possibly catch it off guard and shoot a bolt through it.
Eyes are seen in a few books as a dragon's weak spot.

You cut its wing membranes. Now it's grounded, much less dangerous. I'm assuming they can't move too fast, like dragons would really be like, get next to its head, stab in neck or back of head repeatedly.
