Been a while since I've read any EU lore but I don't recall many authors self inserting themselves into the story as boba fett.

Mary Sue isn't just limited to that. It can refer to a character that is just overly-idealized. As in a character that boils down to "he is teh coolst and in perfect in every way and is cool"
For instance. In Star Wars, there is no recorded instance of a person surviving being eaten by a Sarlacc. Except Boba Fett. Because he is [I]too totally rad and cool to die.[/I]
So some author decided to resurrect him purely on the basis of "I liked this character and want him to be cool and not dead" so he survived even though he plainly shouldn't have. Throw in a bunch of other stupidly improbable things he's done like fighting Darth Vader [sp]TO A DRAW[/sp], and he quickly becomes super stupid.
He was literally just a hired good that got turned into an "ULTIMATE BAD ASS CHARACTER" by the fan fiction and EU writers. I liked him in the movies, but him surviving the Pit of Carkoon and what they turned him into in the EU ruined him for me.

Even in the movies he was pretty badass though, even though we didn't get to see him do much. I mean yeah he's a hired goon, but thats what a bounty hunter is. You put a bounty on a target and then he takes the contract and then goes and kills the shit out of that target. Yeah the EU universe is silly as fuck sometimes, but with star wars, you pretty much got to make your own canon in the EU and decide which books and lore material is actually canon.
If you think Boba Fett is just Gary Sue as fuck, then the entire Mandalorian race is just a bunch of gary and mary sue's. Cause thats all they really do, is just fly around being badass and shit.

On the other hand, I read a story in an EU anthology that came out before the prequels, telling Boba Fett's story. It was better than the backstory told in the prequels.
Of course, that same anthology had IG-88 taking over the second Death Star in a bid for immortality...

But he didn't even do that in the movies. He only caught Han because he was tricked by Lando. He did nothing "badass" in the movies except look cool.
We never get to see him do any cool bounty hunter stuff except in the EU, where there's just as much- if not more- stupid shit that paints him out to be a dumb Gary Sue.
yeah I get that the UE is just dumb, and you need to pick and choose what you care about in it, but even in the films Boba did nothing to really make himself a badass like everybody treats him to be. He was just a guy in cool armor whose death provided some comic relief mid-fight-scene.
Boba is an annoying little shit in the clone wars tv series.
