sempai is the correct actually.
ん sounds different depending on what is after it
[n] (before t, ch, ts, n, r, z, j and d)
[m] (before m, b and p)
[ŋ] (before k and g)
[ɴ] (at the end of utterances)
and romanization is based on what they sound like

After googling, I find out that the original romanization system called it "sempai" but the new, currently used one, says "senpai".
Therefore, my quest is still on.
It's still suppose to be Senpai, it's just usually romanized as sempai
