Mass Effect, canon Shepard was a lady, and it's a fairly casual RPG by most standards.
Tell her to not even get into it and avoid the pain.
Try something nice and simple and easy to master such as Arma and STALKER.
But no seriously, try something like Terraria, simple controls, boatloads of content, explains itself easily and isn't hard to grasp. Also COOP.

If you don't mind a 12 or so year old F2P MMORPG, how about Ragnarok Online? Plenty of "cute" and not so cute monsters to kill. Lots of hats to collect, be it by a 1 in 1,000,000 chance of a monster dropping it or by bringing an NPC a shit load of items that make no sense. It also will run on practically any rig from the last 10 years or so.
Just stay away from Ragnarok Online 2 unless you need something to make suicide seem like THE best idea.
Hearthstone?

DotA 2
It will either forge your relationship into a steel bar no man can bend or break or completely shatter it, in which case find a girl who does play DotA and pubstomp your old SO with your new one
For real though, Age of Empires 2 is dope.

I've been playing Dota since before all stars, I would love to eventually have her get into Dota 2 with me as well, but considering she was having trouble finding "QWERASDF" last night when playing Magicka, I think I'll wait until she is at least more comfortable with the keyboard mouse setup haha. I definitely feel that if I tried to get her into Dota 2 right now, the shattering you speak of may be there result, already moved in together for quite some time so I'd prefer to avoid that :v:
And yeah, AOE 2 is dope.
play qwop together, excellent co-op experience
My last girlfriend thought that the 360 version of Minecraft was better and easier to play than the PC version. I didn't even attempt to show her anything else after she was terrified by Portal's single player.

Fucking casuals

I guess there is no need to ask why she was your last girlfriend. :P

Online PvP shooters seem like a poor choice. You're going stomped into the dirt if you're new to the game you're playing, it's only going to be worse if you're new to gaming in general.
also tf2 is a shit game so even if she didnt like casual games itd be a pretty bad choice to play
TF2's bots on easy will make her feel like a goddess tho
Street fighter
Or metal slug
killing floor is pretty fun even at lower difficulty levels
send her right into the killing fields and hook her up with some sega bass fishing
Damn you all don't know the true grail of beauty..
Bad rats. Will get anyone to love gaming.
Worms Armageddon.
Don't dismiss Mortal Kombat.
My cousin used to play it intensly, on PS3. He eventually got hitched to his "one", and hooked her into playing MK9.
Everytime I visited them, I had no chance vs Francesca, his wife.
Ingame, she beat both her husband and me, I couldn't win a single MK9 match, and I was not a noob at that game.
Some girls might enjoy fighter/arcade games, try it.
I wouldn't start with the MK series, kinda of visually gory, but Street Fighter might work.
