Yes, that is correct about half-swording. But the sharpness of katanas are also generally overappreciated, since they were balanced far(at least the early saber variants) out they had a bigger damage output with strikes rather than cuts anyway. As far as I have understood, they were sharpened in the same way modern chef knifes are sharpened, where the edge will have the shape of an apple kernel. They could be way more sharper, but that would effectively ruin the edge as too sharp means nicks are easier.
As for blade hardness, if you're talking hardness as in actually being robust and not springy, that's more of katana thing rather than the longsword, since they(longswords and european swords in general) were made in tempered spring steel which means it will bend and twist a lot before giving up. In fact, katanas didn't break so much as they just bended irrepairably, whereas longswords would in general have more durability, but in the end some splinter would grow into a large crack which would break the sword.
With that said, some japanese solutions which allowed the katana to have a hard edge but a springy core are really beautiful in their design.
I fins it kinda depressing how at this point the katana has been oversaturated so much it actively turns me off when it's a weapon outside of strict historical settings. Particularly since I otherwise have a huge sword boner.
