Medium rare is what I order but I'd much prefer blue over well done.

of course it's personal opinion, that goes without saying.
When you burn the steak that much to where theres no blood left, the flavor your tasting isn't it's natural flavor, it's just the seasonings you put on it when you marinated it. If you cook it past medium rare, you might as well just be eating a really expensive piece of chicken.
Estonians tend to eat any meat well done. Mom said it's always been like that that we fully smoke and cook our meats. Shame though for I really like well done steak if it's well done but I'd like to try that medium steak you seem to praise.

How I like it: Medium, maybe slightly towards medium-rare.
How I order it: Varies resteraunt to resteraunt. Sometimes I order well done, sometimes rare.

Fun fact: most of the blood is still inside of a well done steak, its just condensed from the liquid boiling away.

Kind of weird but I prefer Well Done but I've always order Medium Well because every time I order meat Well Done they always burn it. I like my meat cooked all the way but not crispy.
Medium rare most of the time, rare if I go to a high quality steakhouse or something.

The red juice is not blood, fyi. It's water + a protein called myoglobin.
