When I try to connect to a server or when I click "start new game", Gmod crashes.

Its a wire problem. Delete wiremod or wait for an update.

I only downloaded it from a server but ok I'll find it and delete it

nope, only insignificant wire things were found, deleted them all and nothing

Have you considered a clean install (renaming garrysmod folder, etc?)
