That was the same with me. I wanted something really nice so on about the 7th year of being on xp I started saving for a really good one and now I can run everything without lag. Only time it crashes is when gmod Cannot handle it :D
TL;DR - Updates = Good, deal with it.
As for avoiding updates - set your GMod not to update in the options and back up your GCF's. Simples. However, it will break in time due to engine updates, regardless of the settings you choose.
Updating the engine is not "shitting on builders". It is making the game better, but unfortunately there are side effects. However, if you're not having contraptions with 1000's of props then you won't even notice them. You have a bit of a complex if you believe Garry is deliberately trying to hurt builders. There are effectively two major gamemodes in GMod. RP, and building. Garry dislikes rp, so why should he try and hurt builders?
The "breaking spawnlists" thing, is because he's updating the spawn list to use a different format, which will make it easier to use and manage. Making a spawnlist easier to use is hurting builders? The "breaking" just means all those created previously will just have to be done redone. He isn't removing the functionality, or making it worse.
RSO - source engine problem. Deal with it. Garry will not change the engine binaries to fix it, as he would need to distribute them himself, and update them manually with all the changes valve make - as opposed to the current situation where when the engine gets any updates, e.g. security updates - we get them at the same time as Valve games do, which can only be an advantage due to the amount of mingebags. And I don't think it is to do with the number of props - if it was, then other source games would have problems with it. It is to do with the data that is stored on entities and all them being sent to the player at once.
I know nothing about the "rate" thing, so I'm not going to comment on that.

Which is in reference to the spawn lists. Doesn't mean that he is going to ruin the game completely because of this, even if he does bring it out on consoles (which I seriously doubt).

I have seen the times Garry simply says things along the lines of no I am not doing that I don't want to. Not that directly but that in the way he types about the subject.
Garry hasn't screwed up Garry's Mod past being enjoyable, and that's what counts.
