As we know, hot dirt/sand/shit goes up.
When we have fuckloads of it, it creates stem(column).

I've never seen this picture before, and if you have you really shouldn't care, it's easy to understand. Also, now that I'm not tired:
The reason behind the mushroom cloud formation is due to both the effects of earths gravity and the RT instability that forms between the varying density of the objects at the site of the explosion. The incredible heat will vaporize any water at the site of the blast, as well as any organic materials. The water vapor will ascend very quickly, causing the light color of the smoke you see surrounding the cloud itself, however as the vapor ascends so quickly, it creates incredible updraft, drawing debris and dust up from the ground. As these debris are tossed high into the air, they begin to fall. As they fall they are met with the left over heat of the fission reaction, and are sent back up into the air. This is what creates the spiral motion. Also, bombs aren't the only things to create mushroom clouds. My favorite example of this here:
