Both linux and os x will require far, far more work than windows does. They both come with a boatload of bullshit to cut through, so I don't see how you'll have less "problems". Lots of people get better performance with wine than on windows, I do too. The reason for that is that none of the graphics or shaders work properly so the games look like something from 1999.
What is your specs anyway? Your computer might just be crap.

Oh also you cant use OS X on your current build so it is POINTLESS to go that route. You will most likely be better off doing a format and installing 7 home premium.
If you're having major problems with 7, your hardware either sucks, or you're doing something seriously wrong.

You seem to be forgetting, OS X will only properly work out of the box on APPLE HARDWARE

Installer has to be edited to make it work. The installer will completely refuse to work if a chip is missing (which it obviously is as it isnt apple's stuff).

OS X has a native version of TF2. However, the Windows version runs pretty well on Linux if you're familiar with using Wine.
There are plenty of guides on how to get it to work in Wine.
I'd say Ubuntu because Linux is pretty cool, but OS X is another variant of Unix so it's alright.

This isn't just an OS X vs Ubuntu debate - it's a Hackintosh vs Ubuntu debate.
If you're certain that you can get full support for every piece of hardware, go for it. I've done osx86 installations, and they're a pain in the ass. I could never get everything fully supported, even after figuring out how to add in my own kernel modules.
Once you've got your Hackintosh set up, if you feel the need to install Linux, you can dual-boot. Don't go all-in on an OS that doesn't support Photoshop.

Photoshop doesn't support Linux.
