I can say it feels better to game on a 27" but for bigger resolution you should get 23" X2.
If you only gonna game and browse the web i would say 27" but if you gonna run many program at once, like photoshop, browse the web and/or any chat program + something more maybe i would say 23" x2

I would recommend 2 23" monitors. I use my second monitor all the time. Although it feels wasted during gaming. I feel like I can't go back to a single monitor at this point.

I suppose it's justified in the productivity sense and also that it is ultimately your decision, but I like it more how you had it setup in the first picture.
I kind of like having my monitors more flared out and wide. Having them curved caused picture distortion and fading because of the type of LCD panel that it is. Horrible viewing angles.. It also left that corner largely unused so I had a huge gap of space behind them. It looks better the other way but it felt cluttered, mostly because I always kept my PC on top of my desk. But I finally decided that I won't be upgrading this PC anymore so no need to go digging in there, so to be more efficient I dropped it to the floor.
