1. How does one share a folder with specific users/computers on a network? If I try to change the permission settings under 'advanced sharing' of a given folder, only the host computer is listed under location - how can I list other computers on the network from this?
2. How can I setup a user account on a host system such that I can login to that account from another system on that network with the host system managing activity of that account?

I didn't. I said that it won't display other PC's on the network from the locations button.

I think there's a setting to broadcast your visibility to the network, however if you just type in the PC and username manually it should work.

1. Start at My Computer, and click Map Network Drive (if you don't want your share mapped to a drive letter, I'm sorry but I don't know how without doing this)

2. Set up the share, blah blah blah. Check the box that says "Connect using different credentials".

Apologies if this seems a little dumb, but that doesn't prompt me to enter the username/password to access the mapped drive... ?

Notice the arrow. It'll propt you as you press next, however the folder needs to already be shared in order for you to connect to it.
Oh and you'd type the PC-Name\\Username thing into the textbox for the username, and the domain should change to the selected computer.
By the way, as only the host computer's visible, I'd recommend you try pinging the other computers names and local IP's to see if there's any communication problems.
