It's just a cord to give it more range.
The 5870/50 will fit in your case, I'm not sure about the 5970 though.

But I'll ask again, So, I'm pretty tech savvy; However when building a PC I dont really know what to look for in the specs. Like, people seem to know just by the names that it's good quality. So, along with assisting me in a build, perhaps a few tips as to why they were chosen and what to look for.

For one, the parts are all from some of the best companies in the industry(Corsair, Gigabyte, Western Digital).
When it comes down to the individual specs you got a board that uses the new DDR3 memory standard. It's also AM3 so if you want to upgrade the CPU in the future you can. CPU is a quad-core that has a lot of kick without creating as much heat or consuming as much power as older quad-cores. One of the fastest video cards on the market and one of the only DX11 cards right now.
So yeah you can play crysis on very high and do video editing with ease. If you're more curious as to what the CPU/GPU can do just google some benchmarks of em.

I wouldn't recommend it, corsair underrates their power supplies so the one I included can actually deliver constant stable 600 watts of power even though it is labeled as 550W.

Thanks again. Also, when building a PC is a flooring or a wrist strap really necessary? I can't find one anywhere.
Install the power supply first (screw it in to the case), attach the power cord to the PSU and to an outlet, and then touch any bare metal on the case initially and every now and then during the build. Some people reckon you don't even need the PSU to be installed, just touch the case.
Make sure the rocker is in the off position if you choose to do this^^

diamond are fine, but with the sapphire you get a better cooler which you probably overclock better with lower temps
