If you try and plug a third in, all screens go black and remain black until you plug out the third and reboot.

If I hook up a screen to each port, my CCC only lets me choose two to use as monitors at a time. What your saying is that its possible to have 3 running at once off the same card? How does one do this?

I'm not sure, I run dual nVidia cards, I was just clarifying his statement.

I believe that the HDMI ans evidence share an output so you can't use those three for it and have to ise the display port instead.
The trick with using 3+ ports on ATI 5xxx and 6xxx series cards is that almost all of them only have two clock generators. Any DVI or HDMI connection requires a clock generator so only two monitors can be connected. DisplayPort connections don't require a clock generator so if you have a monitor that supports DP (Dell Professional series have them for example) you won't use up a generator. There are active adapters that can generate a clock signal; they cost about $30-$40. Passive adapters will not work, although there was talk of them working via VGA. Note: the active adapters have been known to cause issues so your mileage may vary.
