A nice load temperature is 80C max, just overclock until you reach this and increase the voltage until its stable. Just because you screwed up once and got scared of probably nothing doesnt mean you are going to break your card every time. Also: Why would you take out your card to let it cool down?

The 650 watt PSU is a little bit of an overkill.Try a 550watt
As Finley have stated previously, he may crossfire at some point, so he may aswell use 10$ on it.
You don't need 650ws to power CF'd 5770s. You guys really go over the top. 550ws is enough for two 5770s
