I would agree. I'd spend the money on a HP 30" or a Dell 30" having that kind of large resolution with the clarity of the screen is more worth while I'd say.
Eyefinity right now, is a little too unsupported to fully enjoy. Maybe in the future when more games support it and it's bugs are ironed out it would be a viable option, but like BRT and Christopher said, a 30'' monitor will be much better

If the air goes through them like in a line, then the second GPU could be severly overheated, and if the air is split between the GPU's, it would still require a higher RPM to the fan since each GPU is only getting half the air from the fan...

I can say I'd prefer a giant monitor, like 2560x1600 would be sweet.

Good luck trying to tell me that a 2560x1600 monitor is cheaper than a eyefinity 3 x 1920x1080 samsung Syncmaster bx2331 setup.
I could buy 20 of the samsung Syncmaster bx2331 before I come up to the cost of one 2560x1600 monitor.

I'm not saying that. But I'm saying that I would prefer one 2560x1600 over three 1920x1080.
Well, if we are talking purely about gaming, a single 2560x1600 monitor is a cheaper setup overall as you don't need as powerful components to run at acceptable frame rates and a single 2560x1600 monitor is cheaper than three high-quality 1920x1080 panels.
For productivity (IE. working) two smaller monitors is generally better than a single larger one.
The OP was asking about Eyefinity so I presumed he was interested in gaming; in that case a single large monitor would be best. He can always pair it up with additional monitors later.

I got one high quality 1920x1080 monitor. I will only need to buy two more, a better desk and two good radeon cards. That purchase is going to be cheaper than getting a 2560x1600 monitor.
One of those monitors alone costs more than my entire build right now.
I think we have differing opinion on what qualifies as a "high quality" monitor. I believe you are referring to the Samsung monitor you linked to earlier; to me that isn't a high quality monitor. I'm referring to professional displays that use IPS panels. It's incorrect to compare the 30" displays that use the much better panels to cheap TN displays.
The cost for an Eyefinity setup vs. the alternatives will vary by what components you choose. A single 30" display may be more expensive for you based on region or the tech you already have.
Price aside, I don't recommend getting an Eyefinity setup. It's a novelty and isn't worth the hassle.
Don't know what's wrong with a 1920x1080 resolution when it comes down to gaming.
Especially if you got a good (a little expensive) sturdy widescreen monitor, like this Dell Ultra-thing that I got.

What is the cost of one of these monitors in the us?
I just converted the swedish currency to yours and it is $3138.
I prefer the eyefinity setup.
The Dell 3007wfp appears to be available at several online retailers for ~$1500. Some have it cheaper though.
