most people just alt+tab out or run a multi monitor set-up so they can use their normal browser.
Windowed+no-border mode is godsend.

And my point still stands that UI makers feel that the future is "strip down everything, remove numbers too confusing, etc" Mozilla and Chrome want(ed) to get rid of the URL bar for example.

Google/Mozilla want to simplify the UI as much as they can, and if they can begin with a feature that very little people use like the URL bar, then they'll do it. Keep in mind that a Google search of a URL will generally if not always result in the search returning that URL as the first result, and an increasingly (scary even) large number of people are now searching for websites rather than remembering every single URL by heart. For example, a year ago a blog did an article on Facebook's UI changes if I recall correctly, and they got a _TON_ of comments from users who were looking for Facebook and/or its login page, splattering the comment area with foul words because they google search'd "Facebook" rather than type in the URL, and they ended up on a page completely unrelated because it was first hit on Google that day.
I'm guessing from your comment that you aren't keeping yourself in the loop about what goes on in browser development these days, but the examples I'm showing above are the reason why companies are pushing for tabs on top, minimalistic UI, easier to understand UX, etc.
I found the "fucking sources" by fucking googling it, so this isn't exactly an obscure direction from Mozilla and Google. It's the direction of computing as a whole. Apple makes a shit ton of money writing software that any moron can use, and it works.

Any examples? The new UI changes have all been pretty positive from what I've noticed? People eventually realized that no one except power users used the menu and they made it easy to restore it. Same for bottom bar etc.

Well the desire to get rid of the URL bar. People aren't gonna get offended by seeing a URL bar. And phishing will be easier now.
It's even dumber that Valve turned off the URL bar by default on their Steam Client, because now there is an unfitting and awkward "bare" spot where the URL bar should be.

The URL bar change can be challenged, indeed. However that's the only change you've named, and the patch probably never went anywhere. I stand by what I said, most UI changes lately have been positive.
