Nvidia cards can run two 2560x1600 images over their dual DVI. Display port could process 3840x2160 each.
With Nvidia surround you can have up to 3x 2560x1600 panels, unless you had three cards with display ports.
AMD's option is nice, but has it's own set of problems. Since each card only has two clocks for the digital outputs basically, you need an active adapter to get display port working as a third output. Which are pretty expensive and can cause tearing.

I don't understand why a active displayport adapter is a option when displayport monitors are not that much more.

You should think about getting a second 6870 anyway.
I do look forward to the new GPU's but I'm more looking forward to new consoles, just so we can move graphics technology forward to take advantage of the new hardware.
I am still on a 5870 v:v:v
5870 is still plenty powerful.

If you have the money, as of yet the 6950 / 6970 has sufficiently worked for me. (upgraded from 4870)

Nope.
1. Flagship cards take up the most die so they get made first and establish base mean pricing.
2. AMD have already stated to at least three different sites they don't feel the need to drop their prices anymore to be competitive. green and red cards are going to be pretty much the same price, with the best performer being the most expensive.
If you're going to wait for a mainstream offering, you could be waiting until June at [i]least[/i].

I'm looking to buy a 560ti and a i5 2500k. Considering I'm currently on an AMD Athlon 5600+ X2 2.8ghz and a 4870 1gb, are the 560ti and the 2500k worthwhile upgrades considering the announcement?

You're motherboard won't be compatible with the 2500k though
I upgrade every 2 series, I currently have a 5830 and planning to go for a 7970 soon. I'll wait when they release the 9xxx's series after that.
