I've heard of people using cheese for short periods of time.
Despite your CPU being one of the most amazing things known to modern man, the top of it is very ruff at a microscopic level.

There are little spaces all over the place! Heat cannot be transferred through that empty space. So, thermal paste fills it. It fills those holes so that heat can be transferred more effectively.
I've actually heard of people getting by with just metal-to-metal temporarily, but for the long term definitely use thermal paste.
This, I'm still using MtM, after 3 months. The CPU's idled @ 50C, though hasn't gone up from 70.
(AMD Phenom II x4 955, not OC'd)
Am waiting for my MX-2 :3:
Is there a difference in thermal paste between companies, or is it all the same?
Some can be better. I've heard good things about Arctic Silver 5.

Some transfer heat better than others. Some just make it hotter.
Usually I use the paste that comes with stock coolers.
No, go ahead and build a rig without it.
It works best if you overclock and use the stock cooler.
that's not right colinssx
What's a good way of removing it?

You can apply chemicals (Like this http://www.newegg.com/Product/Product.aspx?Item=N82E16835100010) and wipe it away with a cloth.
Although I do hear that a certain alcohol solution can work.
Nope, you don't even need a heatsink. Trust me I'm a professional.
But seriously, yeah, you need it.
