Case is pretty nice, too, basically acts as a screen so you can display your temps and such. (I don't really care about aesthetic, but it has the parts I want.) For a pre-built it doesn't seem to have "Vendor Lock In" bullshit like my alienware did. (Where you basically couldn't put any non-alienware parts in because of dumb shit like a daughterboard connected to the motherboard for fan control, PSU having a special cable to go into the MB, etc.) It lacks a DVD drive but from what I've heard....DVD's are not that big of a deal considering you can install from USB and such. Hell I can't think of a time I used the DVD drive on mine in over a year.

I believe so.
My z97 board states "1 x M.2 Key M Socket supports type 2280/2260/2242 storage devices in both PCIE Gen2 x2 & SATA mode" and has the provision "The SATA5 and SATA6 ports will be unavailable when installing a module in the M.2 port". Your board doesn't have that, it just says "The PCIe x1_1/2 slots share bandwidth with M.2 Socket 3. The M.2 Socket 3 is default disabled." So, I'm with you in assuming SATA M.2 won't work.
I'm curious if your board requires UEFI for M.2 support.

Its a really bad time to buy a gaming PC right now btw. RAM prices are high due to massive demand from SSD's, phones etc + a Cartel. And GPU Prices are high due to the CryptoCurrency bubble.

Anyone have any suggestions? The one listed in the OP paired with the same CPU (X370 Killer) looks solid, do you think that would be a good choice?

I use an ASUS Prime X370-Pro which so far has been super solid. Reviewers love the Asrock X370 Taichi.
Unlike B350 it's hard to go wrong with any X370 board, just find the one you like to look at and/or has the I/O you need.
For memory you want the fastest you can get, and 16GB. Whatever board you choose will have a memory compatibility doc, from that you can choose a high speed kit the vendor has already tested.
As far as I know, 4-DIMM kits will not clock as high, likely no higher than 2667 but YMMV.

No idea if this is an isolated issue or not but I get absolutely no function from either front panel or rear panel audio jacks on my PRIME X370-PRO. This wasn't initially an issue because I had an external DAC but then I got a microphone and realised that wasn't working either.
Everything else works great.

If neither work I have to wonder if the whole audio section of the board is junk. I'd make sure your BIOS is up to date, and try nuking any Realtek drivers on your system then reinstall new ones from ASUS' site.
Anecdotally I have had Windows Update dick with certain drivers I installed from the mfr's website, but it never made anything fail outright. Contact ASUS if all else fails, should still be under warranty.

As long as your motherboard has 3 available 3 or 4-pin fan headers, you'll be fine.

You are probably looking at an Nvidia 1050Ti or AMD RX560. Anything higher is currently being bought by Crypto miners and 2-3x the price they are worth for gaming.
However, you can expect a shitload of high quality and cheap cards on the market once the crypto bubble bursts. So waiting to buy can also be worthwhile.

Its currently a very bad time to buy GPU's due to the crypto currency craze. Same with RAM.
There is always a bottleneck in a system, there is no escaping this.
The 4670K will only bottleneck it in some very specific games (star citizen, Total war). Most games will still be GPU bound (bottlenecked). Being CPU bottlenecked means you can still put your graphics on max if you have a high quality GPU, so it isnt that bad. Overclocking the CPU will help.
Upgrading your CPU right now means you also have to upgrade your Motherboard and RAM (to DDR4). If you go with Ryzen, you also need high speed RAM (16 GB PC3400 RAM=180$ right now). However, Ryzen CPU's are cheap now due to AMD realeasing Zen+(Ryzen+) in Q2 this year.
Im currently running an I5-4670K @4.2Ghz, and a Nvidia 970. I Am waiting to upgrade to a 1080Ti/1080 when the Crypto bubble burst and these things flood the second hand market. I will also upgrade to Ryzen+ then, since RAM prices are projected to come down this summer.

Did you search the exact model of your PC? Can you post it here?
At that resolution you should be able to play almost anything on high, no matter the GPU. Are you having problems? Are you sure your screen is plugged into the GPU and not the Motherboard?
Anyways, the 1050Ti will net you about 2x the performance of the 260x.

My boyfriend has my old 770, it's still perfectly serviceable for modern gaming at 1080p on medium-high.

I'm mostly using it for game dev but even then when I was using it at home I still got really good performance out of it. RAM is the biggest bottleneck I face so having a slightly gimped GPU isn't a huge deal in that regards.

Basically as long as you're not making horrifically unoptimized games, you'll be fine. I did Unity dev work on that card for years and I didn't have any issues at all.

Is the general consensus just to wait for prices to come down? I built my PC for $700 and that was almost three years ago, looking at current prices it might cost even more now for something equivalent, the OP's $800 build is at $939 now.
Any estimates on how long this shortage will last? I'd have hoped with BitCoin falling in price so much it would be lessening, I realize there are other cryptocurrencies rising at the same time, but I really do hope GPU manufacturers do something to combat this issue.

GPU prices will drop whenever the bubble bursts, if this current bitcoin price dip stays, this might be very soon. (1-2 months maybe?)
If the price goes up again we might be in it for another half year, until the mining difficulty becomes so high that GPU mining becomes unprofitable. And thats only if no other new coins appear in the mean time.

But new coins WILL appear and be picked up that can utilize current gpus because the mining capacity is there, already purchased. It would take active software monitoring by the gpu, forced by newer cards, to keep miners restricted to their aging cards.
And believe me, I hate that idea.
Mass computing used to have little noticable impact on gaming and casual assembly. Even in applications involving gpus. But the solutions provided to companies for those tasks do not have the same needs as mining processes. These high performance solutions are not price effective for mining compared to large consumer gpu arrays.
The issue is that custom built solutions, instead of Nvidia/and cards, would directly compete with those two companies on RAM supply and instead of raising the price via demand through storefronts, [b]it would raise the MSRPs[/b].
The worst part is no matter the industry side changes, increased mining capacity will only speed up transactions, but never make it more power efficient. An entirely different model like trusted POSS nodes (centralization!!!) Is the only thing that can make CC's something worthwhile to maintain. The amount of deflation (aka increase in value) would be astronomical at capacities akin to real transaction networks due to the exorbitant power demand.
