It's that kind of design that MIUI, this, Touchwiz etc seem to share that I hate, it makes the UI look like a child's toy. Stock ICS is currently the best looking mobile UI and everyone should copy it.

Well, good news: I'm probably gonna get myself a regular X10 instead of a SK17 due to the bigger screen and better camera. However, do you guys know where I can buy a Xperia X10 for about $250-280 in the U.S? And if possible, free shipping would be terrific.

I'd steer clear of SE's first gen android phones!
Their new line, however, is pretty good.

For an X8 you'll be wanting something lightweight which'll be AOSP based. Look at CM7 and ROMs based on it.
There are usually stickies in the Development section of your phone's sub forum on XDA on installation.

I do not know about X8 ROMs, but you might have some luck finding some that you like on [url=http://forum.xda-developers.com/forumdisplay.php?f=846]XDA[/url]. As for guides, there is one for each device/manufacturer, so you will also probably find guides on XDA. If not, Google is your friend.

also, I can get the Motorola keyboard with bluetooth mouse free for $40. All for my Xoom and later for my Touchpad. Worth it?
