Why not just i5-750? It's better price/performance for everything that isnt heavy rendering and the likes. But then it depends on what you do.

I encode shitloads of videos, compile applications, etc. :/
Then maybe i7 920 is the way to go :)

i7's are good for the HT. Rendering and things that are hyper-threaded will be way faster obviously, otherwise there's no point in buying an i7 over an i5.

Why would you buy a Xeon? They're usually 4 times more expensive and have the exact same features as their i7 counterpart. The i5 models have HT, but require you to buy prohibitively expensive server motherboards, further raising costs.
In both cases, the only advantage to getting a Xeon is being able to run them in dual or quad socket boards, which most people don't need or let alone afford.
