Getting a 2G iPod Touch for Christmas, a few questions.

Is it possible to play any games with the Wiimote as I see BTStack (which I'm not sure works on the 2G iPod Touch) allows connection of a Wiimote but I don't know about any apps that utilize this technology.
Are there any Bluetooth gamepads that work with any iPod applications? I was playing Nazi Zombies on my friends jailbroken 1G iPod Touch and I found it incredibly awkward and thought about how easy it would be with a controller.
Is there any big hit on performance after jailbreaking? My friends iPod crashes on applications regularly and performs really slowly after exiting an application. Then again he's got like 7 pages of applications and probably some custom ones that run all the time from Cydia.
Do the PS1, GBA, DS (if it exists) or N64 emulators work well on the iPod touch? Not that the PS1 or N64 would be easy to control anyway without some form of gamepad..
There are apps for the jailbroken OS that can exit processes easily to cut down on memory usage and therefore crashing.
Yes, there's a PS1 emulator, I think there's a GBA emulator if I remember rightly. Haven't heard of a DS one. Apparently someone is writing an N64 emulator but that'll be 3GS and iPod Touch 3rd Gen only.
Your device won't crash if you don't install too much crap. I've not heard of any Bluetooth gamepads and I doubt there are any, the Bluetooth implementation on the iPod/iPhone sucks, pretty much restricted to Bluetooth headsets only. This does mean you can have some cool wireless headphones, though.
Jailbreaking does not do anything to your performance unless you install any homebrew apps that modify the 'desktop'. Winterboard nukes your performance, and it lets you install themes. Bosspaper lets you set a custom background and only lags if you use a slideshow with fancy effects and use multiple pictures.
The GBA emulator is pretty flawless but the limits are in the controls, it's fine if you're playing a game that's not fast paced or complex. I play harvest moon and pokemon on mine, it works great. The PSX emulator supposedly works but i don't think there are any games that are playable on the 2g. if you get a 3g you can play a couple but it's not worth it, i don't think.
I hear the 3GS can do it perfectly.
My PSP can too but you can officially play PS1 games on a PSP. (and that's unrelated)

Mine was assly slow when i had like 6 pages of apps, and i had just a few megabytes left on the storage - don't do it. No gamepads, though the Wiimote works in some apps.
