Sorry I'm really inept when it comes to modifying beyond stock, as I couldn't do it before (Desire Z..) so I never learned about it :v: What will the kernel do? will my phone still be running the same touchwhiz interface and stuff but will it just install something via Odin?
or will it be like a whole new phone, as if I flashed a rom?
It won't change anything in the UI, but custom kernels allow a variety of things like sound enhanements, display color tweaks, over+underclocking, undervolting, changing governors, using softkeys as notification indicators, and some more stuff.

It literally changes nothing you can notice, it's just a kernel. It won't affect your ROM at all.
it also takes a few seconds to flash

Yes, get the latest SiyahKernel tar file and put it in the PDA slot of odin (don't change any odin settings) when the phone is in download mode. It'll reboot and then head to the S Tweak app it'll install and go to audio, find hardware EQ setting and set to eargasm.
S Tweaks is a pretty awesome app and you can see how potentially smooth all apps could be if made properly.

Chrome master race checking in.
Although chrome takes up a out 70mb or so of my internal storage pushing other apps into being un installed, it's still pretty good. But it's still relatively laggy. I like how the app doesn't close when you close all of the apps. Unlike stock it closes which is annoying. I tried dolphin and loved it pre-ICS but jumped to chrome now. Too bad there's no full screen mode, dark theme and other stuff since it's in beta now. Also the bookmarks are so much easier to access too.

I got a Galaxy Tab 2 7" as a nice little addition to christmas present. Any way to make the transitions and stuff smoother? It doesn't feel very smooth after using an S3.

If you're new to Android: let it be known that almost everything is customizable out of the box, and that includes the home screen manager! (the home screen is actually, for all intents and purposes, an app; it's called the launcher).
I would personally recommend you get [URL="https://play.google.com/store/apps/details?id=com.teslacoilsw.launcher"]Nova Launcher[/URL] (or its pro version); it's much better than the stock launcher provided by Samsung.

Unfortunately not on that, you could potentially install an AOSP ROM but it wouldn't get your hopes up.

Welcome to the world of Galaxy S phones. This is how 70% of your fuckups will end up. 25% will end up in an unbootable phone which is still easily fixable although you might lose data. 5% might actually end in a hard brick.
