The card is capable of playing at a good level at 720p an acceptable in 1920*1200.
many games these days take around 500-700 MB of vRAM.

No. at 1920x1200 the same cards in the 512mb and 1gb do exactly the same, save for i think gta4 and something else.

no that's exactly where the 1GB cards outperform the 512MB cards

not really. save for crysis, gta4, and probably metro2033, it's a 1-3 fps difference, even at 2560x1600

Apple did it too when they released the MacBook pro first, then the regular ones. As do many car manufacturers, first debuting their tech in their high end cars then the cheaper ones.
EDIT: And Apple with new versions of the iPhone first, then changing the iPod Touch.
