Cameras used for thermal imaging are EXTREMELY expensive and not really practical for this application. Kinect has an IR camera and uses a grid of dots to determine the depth:

Infrared cameras pick up heat signatures in the form of Infrared light. All objects that give off heat, also give off infrared light. It's just very small. So special infrared camera usually are needed to see heat.

Yeah I am aware of that, and kinect can't do that.
